Southwest Tacos

Did you know that Atotonilco Tortillas are made with Illinois corn?  It doesn’t get much better than that!  Two corn tortillas toasted and filled with roasted sweet potatoes and a sweet corn, black bean and honey-lime salsa. Served with white rice pilaf.   Add your favorite hot sauce and scream ole!
