Chickpea Tuna Salad

A vegan preparation of the classic tuna salad recipe, utilizing garbanzo beans as the tuna and using a vegan mayo!  Mixed with onions, tomatoes, olives and capers and then stuffed into a fire roasted poblano pepper.
